Brewing Date: 25/06/2010

Type: Extract Wheat Beer | Bottle Tag: EWB

1. Initial water: 14L

2. Extract: 2.5Kg Wheat,  1.2Kg Super-Light Malt (4L together)

3. Hops: 30gr Fuggle, 30gr Herltau for 55min

4. Water up to 25L  @ cooling (adding 7L)

5. Yeast: 10gr Fermentis Safale us-05 

OG:  1.046

Brewing Time: 55min

Cooling Time: 12min (Untill 36Deg~)

Switch Tanks - Date: 07/07/2010

                      Gravity: 1.015

                      Amount after swapping: 23L

bottling - Date 10/07/2010

fermentor was cooled @ 8Deg overnight
F.G: 1.012
volume after fermentors switch: 22.5L
sugar added: 180gr (8 gr/L)
volume after bottling: 21.5L (43 0.5L bottles plus change)

expected ABV: 4.4%

comments:

- smells great at bottling. no white foam at all.
- three weeks post bottling and the beer is still not ready - sweet and not enough foam.

Brewing Date: 16/07/2010

Type: Partial mash American Wheat Beer | Bottle Tag: PAW

1. grains:

- 1.55Kg pale ale malt

- 0.95Kg Weyermann CaraAroma

- 0.3Kg Weyermann CaraAmber

2. Mash with 8L for 60 min @ 65-68Deg

3. There was no sparging because the pot fell on the floor and spread all over the portch.

4. Extract: 2.5Kg Wheat Extract was added to the mult.

5. Water up to 25L  (adding 14L)

6. 32gr fuggle boiled for 60min, 14gr halertau boiled for 15min.

7. Yeast: 10gr Fermentis Safale us-05 

volume after cooling: 18L

OG:  1.046

 

Switch Tanks - Date: 20/07/2010

                      Gravity: 1.016

                      Amount after swapping: 15L

comments:

-never put a full pot at the edge of a table!!

- cooling time: 30-40 min

- It took 30-40 min for the mult to start boiling.

- the hops were boiled inside a nylon beg.

- Quite lot of mash particles ended up in the fermentor, beer was cloudy

- thermometer broke

- beer smelled good at tank swapping.

- there was a brownish foam on the top instead of the usual white one (probably due to the beer darkness)

- the beer was very cloudy - because the yeast haven't sunk yet - swapping was too early I think.

  

bottling - Date 30/07/2010

fermentor was cooled @ 8Deg overnight
F.G: 1.014
volume after fermentors switch: 14L
sugar added: 100gr (7.14 gr/L)

volume after bottling: 13L 

comments:

-beer was dark and cloudy.

expected ABV: 4.1%
